Blueberries healthy cake

🧾 Ingredients

Almond flour | 1 cup |
Baking soda | 2 tablespoons |
Salt | A pinch |
Coconut or almond milk | 1/2 cup |
Greek yogurt (unsweetened) | 1/2 cup |
Coconut oil (or ghee) | 1/2 cup (melted) |
Eggs | 2 |
Blueberries (fresh or frozen) | 1 cup |
Stevia or natural sweetener | To taste (start with 1–2 tsp) |
Chopped walnuts or almond slices | Optional (for topping or inside) |
🥣 Instructions
1. Preheat oven to 350°F (175°C). Grease or line a loaf pan or cake tin.
2. In a large bowl, combine dry ingredients: oat flour, almond flour, baking soda, salt.
3. In another bowl, mix wet ingredients: vegetal milk, Greek yogurt, coconut oil, eggs, and sweetener.
4. Fold the wet ingredients into the dry mixture. Stir until smooth but don’t overmix.
5. Gently fold in the blueberries and optional walnuts or almonds.
6. Pour the batter into the prepared pan and smooth the top.
7. Bake for 50 minutes, or until a toothpick inserted comes out clean.
8. Let cool slightly before slicing. Enjoy!
You can make a frost with greek yogurt, sweetener, blueberries, and 1/2 half of tsp of lemon juice, mixing in a blend and decor the cake.
