Easy Homemade Kimchi Recipe

Ingredients:

  • 1 medium Napa cabbage
  • 1/4 cup sea salt
  • 3 cups of water
  • 1 tbsp grated ginger
  • 4 cloves garlic, minced
  • 2 tsp sugar
  • tbsp fish sauce (or soy sauce for vegatarian version)
  • 2 tbsp korean red pepper flakes (gochugaru – adjust to taste)
  • 4 green onions, chopped
  • 1 medium carrot, julienned
  • Optional: 1 small daikon radish, julienned

Instructions:

  1. Chop the cabbage into bite-sized pieces. Dissolve salt in water and soak cabbage for 1–2 hours, tossing occasionally.
  2. Drain and rinse the cabbage well, squeezing out excess water.
  3. In a large bowl, mix garlic, ginger, sugar, fish sauce, and gochugaru into a paste.
  4. Add cabbage, carrot, radish, and green onions to the paste. Massage it all together with gloves until well coated.
  5. Pack tightly into a clean glass jar, pressing down to remove air pockets. Leave 1 inch at the top for expansion.
  6. Ferment at room temperature for 1–3 days, then refrigerate. Taste improves with time!
